National Hot Chocolate Day: Celebrate with these four recipes

Today is National Cocoa Day, which is perfect for winter days full of flurries and flakes. Below are four takes on the cups of hot chocolate that we love.

Home-style Hot Cocoa

Prep time: 5 minutes Cook time: 5 minutes Total time:  10 minutes

This real cocoa recipe is as traditional as it gets.  It calls for eight large marshmallows as optional but who are we kidding?  Snack on a few extra while you’re at the stove.

Ingredients

  • 1/2 cup white sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/8 teaspoon ground cinnamon
  • 1 pinch salt
  • 1/3 cup boiling water
  • 3 cups milk
  • 1 cup half-and-half, divided
  • 3/4 teaspoon vanilla extract
  • 8 large marshmallows (optional)

Directions

  1. Whisk together sugar, cocoa powder, cinnamon, and salt in a saucepan; stir in boiling water. Whisk until sugar is dissolved.
  2. Bring cocoa mixture to a simmer over medium-high heat, stirring constantly, about 2 minutes; stir milk and 1/2 cup half-and-half into water mixture. Cook and stir just until hot, about 2 minutes. Remove saucepan from heat; stir in remaining half-and-half and vanilla extract.
  3. Divide cocoa into mugs, top with marshmallows, and serve.

Candy Cane Cocoa

Prep time: 5 minutes Cook time: 10 minutes Total time: 15 minutes

Chocolate and peppermint are like peanut butter and jelly.  This would be a great drink for holiday and tree trimming parties.

Ingredients

  • 4 cups milk
  • 3 (1 ounce) squares semisweet chocolate, chopped
  • 4 peppermint candy canes, crushed
  • 1 cup whipped cream
  • 4 small peppermint candy canes

Directions

  1. In a saucepan, heat milk until hot, but not boiling. Whisk in the chocolate and the crushed peppermint candies until melted and smooth. Pour hot cocoa into four mugs, and garnish with whipped cream. Serve each with a candy cane stirring stick.

Hot Sipping Chocolate with Cinnamon Whipped Cream

Prep time: 5 minutes Cook time: 10 minutes Total time: 15 minutes

This recipe isn’t for faint-of-heart foodies.  You’ll be breaking out the demitasse cups, mixing different types of chocolate and going the distance to make your own whipped cream.

Ingredients

  • 4 cups half-and-half, light cream, or whole milk
  • 1 cup Ghirardelli(R) 60% Cacao Bittersweet Chocolate Baking Chips
  • 1/2 cup Ghirardelli Sweet Ground Chocolate and Cocoa
  • 1 tablespoon granulated sugar
  • Cinnamon Whipped Cream (see below)
  • Stick cinnamon
  • Cinnamon Whipped Cream:
  • 3/4 cup whipping cream
  • 2 tablespoons powdered sugar
  • 1/4 teaspoon ground cinnamon

Directions

  1. In a 3-quart heavy saucepan, combine half-and-half, Ghirardelli(R) 60% Cacao Bittersweet Chocolate Baking Chips, Ghirardelli Sweet Ground Chocolate and Cocoa, and sugar. Cook over medium-high heat, whisking constantly, until just boiling and mixture is smooth.
  2. Serve immediately in demitasse cups or shot glasses with Cinnamon Whipped Cream and stick cinnamon.
  3. In a chilled medium bowl, combine whipping cream, powdered sugar, and cinnamon. Beat with chilled beaters of an electric mixer on medium speed until soft peaks form (tips curl).

Hot Scotch Cocoa

Prep time:  1 minute Cook time:  1 minute Total time:  2 minutes

This super fast cocoa gets right down to business.  Instant hot chocolate mix and butterscotch schnapps make for a more grown-up version of the drink.

Ingredients

  • 1 (1 ounce) envelope instant hot chocolate mix
  • 1 cup hot milk
  • 1 fluid ounce butterscotch schnapps

Directions

  1. In a mug, dissolve instant chocolate mix with hot milk. Stir in butterscotch schnapps.
