The holidays are special for me with lots of family time. My mom’s family all live in Georgia less than an hour from each other so growing up we were together for every holiday, birthday and anything else you could celebrate. 30 plus people and all the food you can imagine. If it can be made into a casserole, we had it.
I always like to sneak around before lunch is officially served and sample a little bit of everything. My favorite to snack on is homemade pimento cheese on celery. The recipe is actually from my dad’s side of the family, but my mom has brought it over to her family and we all enjoy it. So I’ll sneak as many as I can without emptying the plate.
Pimento Cheese Recipe
1 1/2 cups mayonnaise
1 (4-oz.) jar diced pimento, drained
1 tsp. finely grated onion (I usually use 1/2 of a large onion)
1/4 tsp. ground red pepper
1 (8-oz.) block extra-sharp Cheddar cheese, finely shredded
1 (8-oz.) block sharp Cheddar cheese, shredded
Stir together first 4 ingredients in a large bowl; stir in cheese.
Note: freshly grated cheese is best, but in a pinch you can use store bought grated cheese.
