Music in the Kitchen: Hit Singer/Songwriter, Jesse Rice, Delicious Low Country Boil

5 lbs potatoes (baby red)
10 ears corn, halved
1 large lemon, quartered
5 lbs shrimp shelled
2 lbs smoked sausage (cut 2-inch thick)
2 tablespoons salt
4 tablespoons black pepper
1(4 ounce) seafood boil
3/4 cup Old Bay Seasoning
12 ounces beer
4 large garlic cloves, crushed
3⁄4 lb butter


In a large pot that I typically use to steam crabs or lobster, I’ll fill it about 1/2 full with water.
Then add the potatoes, sausage and lemons. Also measure out 1/2 cup Old Bay seasoning and crab boil package. Sip on a beverage and wait for this to boil for about 10 minutes. Next, I toss in the corn.

In a second pot melt 1 stick butter and you’ll toss in the crushed garlic, beer, 1 tablespoon of salt, 4 tablespoons of pepper and 4 cups of water. You’ll wait for this to boil as well. Add the shrimp to the boil. While shrimp is boiling, I’ll drain the potatoes and corn pot.

Then comes the layers. I start with 1/2 pound melted butter and generous dusting of Old Bay seasoning in a large bowl. Then I dip out the potatoes, corn, lemon and sausage.

Then I’ll drain the shrimp pot and place the shrimp in my large bowl. Sprinkle with Old Bay seasoning!! Most of the time I serve this with a cocktail sauce and plenty of napkins.
