Anthony Orio’s Clams & Spaghetti Recipe

This is a very simple Italian dish and it doesn’t take long to make. 

 

Ingredients
1 can whole baby clams
3 jars clam juice
1 lbs of spaghetti (I prefer Delallo brand if available)

4-6 medium cloves of garlic (depending on how much you like garlic)

6 table spoons of extra virgin olive oil
Black pepper
Crushed red pepper
Fresh Italian parsley 
Fresh oregano
Parmesan cheese

Process:
Cook pasta according to the package. Al dente is always best. 
 
Crush the garlic cloves and mince. Be sure to crush them first, this helps release the flavor. Heat olive oil over a low to medium flame. Add garlic and sautée 2-3 minutes (be sure not to burn the garlic). Add 2 jars of the clam juice and bring to a simmer. Once simmering, add the can of whole baby clams and return to a simmer. Once simmering again, add the last jar of clam juice and return to a simmer. Lower your heat so that the entire sauce is lightly simmering. Add black pepper and crushed red pepper to taste. While your sauce is lightly simmering chop fresh parsley and oregano. Both of these can be to taste as well. I typically use a fistful of fresh parsley and about a palms worth of oregano.  Add to sauce and simmer about 2-3 minutes more.

Serve over spaghetti with Parmesan cheese sprinkled on top.
