Good Afternoon John! Thank you so much for talking with Battered and Brewed! What was life like growing up in San Antonio, Texas?
I loved the story of the Alamo and the TX Revolution and found myself obsessed with it at an early age. Also loved having the Spurs as a pro basketball team. It was an awesome city to grow up in. Close to the hill country and just a few hours from the beach.
They say Texas does food bigger and better than anywhere else, what was your favorite meal growing up?
Burgers and fries. I think I have ate over a million of them.
Was there ever music playing in the kitchen growing up?
Sometimes my dad would have George Strait or Roy Orbison playing.
Texans take their food seriously, especially when it comes to chicken fried steak—the blue plate of choice—are you a fan and what’s the secret behind a great chicken fried steak?
I am a fan of the chicken fried steak. I love when it is well done on the inside and there’s plenty of golden fried goodness wrapped around. With a side of mash potatoes and gravy.
You can’t forget the Texas Barbecue.What sets apart great barbecue from just okay barbecue?
I think the atmosphere you eat it in is always special. The smell of the BBQ pit, the simple utensils, and sauces that are always easy to find. We grew up eating at Black’s BBQ in Lockhart, Texas. I’ve loved eating brisket ever since I was little.
Which four things are always in your home refrigerator?
Well-seasoned fajita meat, Shiner beer, veggies and fresh fruit.
What food is your food vice? You know, one you sneak in a little extra of when no one is looking.
I just love pizza. I can eat it anytime anywhere. I wish I could have it 3 times a day…
Throughout your career and numerous shows throughout the U.S. I am sure you have had some great dining experiences. What’s the most memorable meal you have had being on tour?
I love finding little holes in the wall that served breakfast tacos in other towns, so I know where to go back to next time I am there. I like really a good hearty breakfast taco with plenty of eggs, bacon, and that homemade flour tortilla.
How does food play a part when touring or being in new places?
It is always fun to find a venue that serves great food, or go to a city that has a famous restaurant. But I still love finding new spots with a great atmosphere, menu and service, because I am the kind of customer who will come back again and again.
Any must have backstage food requests?
We’ll take what we can get! Love anything hot and healthy. Beer doesn’t hurt either…
Aside from your passion for food and music, what’s the one thing that really keeps you ticking?
I love to be outdoors, going fishing or paddling in my spare time. It feels good to disconnect and reconnect to the outside.
You just released your fourth release and second full album, PROVING GROUNDS, in June. What sets this album apart from the other ones you have released?
I feel like my songwriting is the best it has been on this record and my voice feels more in the pocket. Really proud of the record and I think it has given me new momentum as an artist.
It has been receiving a lot of praise, that must feel pretty special?
It is one of the most gratifying things for people to complement your work.
You have been touring like crazy since the release, any other big plans for the rest of the year?
We’ll keep touring and I will keep writing for the next project!
Finally for Battered and Brewed, If you could eat or have a drink with one person dead or alive, who would it be and what would you have?
A beer with Waylon Jennings or Abe Lincoln
