Brett Eldredge’s Sweet and Sour Salsa

Brett Eldredge’s recipe for sweet and sour salsa is featured in CMT and Southern Living’s cookbook “Music City’s Greatest Eats”. Eldredge says his mother would make this “sweet and savory” recipe for him and his friends growing up.


  • 1 large mango or 2 large peaches, peeled and cubed
  • 1 1/2 cups diced bell pepper (or a mixture of red, yellow, orange, and green)
  • 1/4 cup chopped red onion
  • 2 Tbsp. olive oil
  • 2 Tbsp. brown sugar or honey
  • 1 Tbsp. red or white wine vinegar or apple cider vinegar
  • Table salt
  • Freshly ground black pepper
  • 3 Tbsp. chopped fresh cilantro


  1. Combine mango (or peaches), bell peppers, and onion in a medium bowl
  2. Whisk together olive oil, brown sugar (or honey), and vinegar in a small bowl
  3. Add salt and pepper to taste, and drizzle over mango mixture
  4. Toss to coat
  5. Cover and chill 1 hour or until ready to serve
  6. Stir in cilantro right before serving

Makes about 3 cups
