Southern Cornbread

Southern Cornbread

    Ingredients

  • 2/3 cup white sugar
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 2 cups Duncan Hines white cake mix
  • 2 1/2 cups milk
  • 1 1/2 cups cornmeal
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 stick butter
    Directions

  • Preheat oven to 400 degrees F. In a small bowl, combine cornmeal and milk; let stand for 5 minutes. Grease a 9×13-inch baking pan. In a large bowl, whisk together flour, baking powder, salt and cake mix. Mix in the cornmeal mixture, eggs and oil until smooth. Pour batter into prepared pan, melt the stick of butter and pour over batter. Bake in preheated oven for 30 to 35 minutes, or until a knife inserted into the center of the cornbread comes out clean. Pour a big glass of Buttermilk and dip cornbread into the milk – or better yet just drop it in and eat it with a spoon. This is Southern eating at its BEST!
